After 6 years on Avenida de la Playa in La Jolla Shores, Galaxy Taco closed for good in October. Now, a new restaurant concept led by the ownership team behind George’s at the Cove will open in its place.
The modern Mexican menu features elevated eats made with heirloom corn tortillas. Drinks include epic margaritas topped with top-shelf liquor and charred fruit.
Menu
The team behind George’s at the Cove puts its own modern spin on tacos at Galaxy Taco, just down the road from La Jolla Shores. Chef Trey Foshee and his partner George Hauer (the George in George’s at the Cove) cradle organic, heirloom corn tortillas in creative ways, with meats, seafood and vegetables served alongside inventive sauces and salsas.
The restaurant’s fish tacos—stuffed with marinated and grilled white-meat fish, cabbage, mango and traditional salsas, plus a side of made-to-order guacamole and jalapeno lime mayo—are worth the price. The elote is another highlight, topped with chili powder, lime mayo and cotija cheese.
The upscale Mexican eatery shuttered October 27, after six years in the neighborhood, but its owners are working on a new concept that will open next spring. Eater learned that head chef Christine Rivera will move to George’s at the Cove while she helps develop the new eatery.

After a six year run, Galaxy Taco — a casual Mexican eatery in La Jolla Shores — shuttered last October. The restaurant was rebranded as Sandpiper SD by the team behind George’s at the Cove, led by chef Trey Foshee alongside Eater Young Guns winner Christine Rivera and advanced sommelier Evan Vallee (Huntress, Vino Carta).
Sandpiper has opened in a former Galaxy space, bringing an oyster bar and grill to the corner of 2259 Avenida de la Playa in La Jolla Shores. The airy, relaxed hangout features a full menu of tacos and other Mexican fare as well as a big tequila selection.
It’s worth visiting for the heirloom Masienda corn tortillas, made-to-order guacamole and epic margaritas with top-shelf liquor and charred fruit. The tlayudas, squash blossom quesadillas and steak tacos are also excellent. You can’t go wrong with their #TacoTuesday takeover special, where a guest chef creates three new tacos for the night’s menu.
